Preparation: Sour liver on stew (pörkölt) Ingredients: 1 kg onions 0,5 kg mangalica liver 1,5 kg mangalica shoulder tomato vinegar bay leaves salt 3 tablespoons of paprika powder garlic cumin Pickled onion: Cook onion rings in salt water during 20 minutes, until they are soft. Add 2 tablespoons vinegar bay­leaves and some sugar to the water The stew (pörkölt) and the liver: Cut the shoulder in cubes and steam on mangalica fat until soft. Fry 2 onions on 2 tablespoons manga- lica fat until light brown, add it to the meat and mix with 3 tablespoonful of paprika powder Pour water in the pot until the meat is just covered. Add the bay-leaves, cumin, garlic, tomato and steam it for about one hour until it turns soft. In the meantime boil the liver cut it into stripes and mix with the meat.
