Alternative nourishment: the Slow Food movement An Italian journalist, Cairo Petrini organised in 1986 in Rome a movement to protest against such phenomena, which are symbolized and promoted by a fast food restaurant to be opened those days in the Piazza de Spagna. The movements aim is to protect the pleasures of gastronomy and the local products from the effects of globalisation and homogenisation. They choose the snail as their symbol. They organised small local communities, which propagate together that every community, every region and every nation has the right to enjoy their own cuisine, dishes and products. Therefore, they have the right to use and to produce their own products, to cook and eat their own dishes. One of their most famous activities is the research, registering, keeping, cataloguing and protecting local tastes, products and ways of preparation, which are almost forgotten. They launched their project called Noafe ark. Its purpose is to save on the ark'tasty , high quality, culturally, historically, geographically well determined foodstuffs. With this they promote farmers and consumers to "get together " on the markets of organic food. They intend to make the traditions and efforts present in the general and professional education and they have founded their own university of gastronomy. They have organised so far international exhibitions (Salone del Gusto], furthermore, fairs and conferences. At the same time they remain faithful to their small communities and circles of friends in the so called 'conviviums'.
