one for the determination of fermented sugar. To the left stands a large collection of gas and spirit burners - Teclu, Bunsen, Meeker, Barthel etc. -, of water and steam baths, of various autoclaves, ovens and furnaces, of mills and mortars. One narrow side of the hall houses the hood, equipped with a Kipp gas gener­ator and several gas holders, the washbasin niche, a pressing mashine and a shak­er, while the other serves as an entrance to the office. The old working tables - sup­plied with heating gas - bear a Sohxlet extractor, a water distillator, refractometers, polarimeters, two microscopes and a series of monochromatic glasses. The above mentioned apparatus - mostly of french or german origin - has been restaured and is ready to use. The old fashioned office is elegantly furnished and houses the archives and lab­oratory records, as well as a valuable specialized library of more than two hundred volumes on chemical and microbiological analysis, all dating between 1870 and 1920, and edited in Greece, France, Germany, Britain and Italy. Though modest in size and means, the museum is not deprived of interest, since it visualizes the way in which an analytical laboratory actually functioned by the turn of the century.
