Heat Ys cup peanut oil in saucepan; use to cook l/t cup minced onion until tender. Remove from heat. Beat together 2 egg yolks, Y3 cup cold water, 1 teaspoon salt, Yi teaspoon pepper. Gradually beat in cooked onions. Stir in 2 tablespoons chopped parsley and Yi cup matzo meal. Beat 2 egg whites to soft peaks« gradually fold into matzo mixture. Cover; chill at least one hour. Using 2 teaspoons rounded measure, shape iito balls; drop into boiling chicken soup. Cover and Ivil gently 25 to 30 minutes. 18 fluffy knadels to serw atop hot soup. Stir in “boiling water to dissolve gelatin. Stir in sugar and lemon juice. Pour into mixing bowl and chill until it begins to thicken. Fold in stiffly beaten egg whites. Pour into 2-quart crystal bowl. Chill. When firm, decorate with fresh, whole strawberries. 6 servings. — Sweet-Potato Tzimmes 2 tablespoons fat 3 pounds brisket 4 cups boiling water IY2 teaspoons salt Yi teaspoon pepper i/4 teaspoon nutmeg 8 carrots, sliced 4 sweet potatoes, peeled and cut in quarters Ys cup brown sugar Melt the fat in a Dutch oven or casserole and brown the beef. Farfel and Fresh Apple Charlotte —1 whole egg 2 eggs, separated Vt teaspoon salt li cup sugar H teaspoon ground cinnamon 1 cup cold water 2 cups matzos farfel (matzos bits) 2 tablespoons vegetable fat 1 teaspoon grated lemon rind 2 cups diced apples wine sauce Beat one whole egg and 2 egg yolks. Combine salt, sugar and cinnamon and add to .egg yolks. Pour cold water over ‘fariel, drain immediately and add. Blend in fat, lemon rind and apples. Beat 2 egg whites to soft peaks and carefully fold in. Turn into greased 1% quart baking dish. Bake in preheated 350 degree over 35 minutes, until lightly browned. Serve with wine sauce. 6 servings. Wine Sauce Y\ to Vi cup sugar 1 tablespoon potato starch V* teaspoon salt Vs cup boiling water 1 tablespoon fresh lemon juice Latzi’s Tongue Polonasst 1 cup consomme 1 cup ttomato sauce Y\ cup sweet red wine 12 bay leaves 1 teaspoon salt 2 tablespoons seedless raisins 2 teaspoons potato starch 2 tablespoons cold water 1 pound cooked tongue, sliced Combine first six ingredients in saucepan; bring to boil over moderate heat. Blend potato starch and cold water; stir in a little of the hot sauce. Return all to hot sauce and stir until it boils. Simmer 5 minutes. Arrange slieed tongue in cook-and-serve dish; pour on sauce (remove bay leaves) and heat thoroughly. 6 servings. 2 cups pot cheese 2 egg yolks, beaten Vz teaspoon salt 4 tablespoons matzo meal 8 tablespoons melted butter 2 tablespoons sugar (optional) 2 egg whites, stiffly becten Potato Latkes 2 eggs 3 cups grated, drained potatoes 4 tablespoons grated onion 1 teaspoon salt Yi teaspoon pepper 2 tablespoons cracker or matzo meal Yi cup fat or butter Beat the eggs and add the potatoes, onion, salt, pepper and meal. Heat half the fat or butter in a frying pan and drop the potato mixture into it by the tablespoon. Fry until browned on both sides. Keep pancakes hot until all arcfried and add more fat or butter as required. Serves 8. PASSOVER GREETINGS
