DÁVIDHÁZY István: Krausz Károly clothmaker at the markets of Sopron county (1869-1903) The cloth-guild of Sopron formed in 1 625 pined away guickly after the dominating usage of power-loom weaving in the second half of the 19th century. The number of its members decreased from 50 in 1850 to 6 in 1878, the forming of a trade association which replaced previous guilds. The only clothmaker was Krausz Károly who could not only assure the survival if his giuld after the turning of the century but also make a fortune. The secret of his success lay in the fact that he went to the markets in Sopron county with his self-made or bought cloths. He took part in 55-65 markets a year. According to the notes of the trade diary from 1869 to 1903 he got the major parts of his business income (39.6 - 55.9 %) from these markets. The market-diary of 1878 says that every year he drove 3500 - 3800 kms in a court and the bigger part of his income came from the east part of the county which had a flourishing agriculture. In my article I deal with dishes made from cereal, vegetable and meat ingredients as well as with drinks and the way what they have collected. Different methods of preserving use in peasants' homes. Earlier rye and the mixture of rye and wheat were the raw ingredients of bread. Peasants often ate mashes (f.e.,,sterc"), and a Lenten fare called „csiripiszli" or ,,szalados" , which was made with the help of germination. ,,Jézus plain cake" was a typical pastry, and other typical cake was „rábaközi pretzel" at feast. In this region pickles were made both from turnip and the mixture of cabbage and turnip. They have also found information about textile-, leather-, metal-, iron-, salpetre-indusry, etc. The datas can be completed by workshop remainings which were archeologically dated.
