BALÁZS FÜREDER AUNTIE RÉZFS SZEGED COOKERY BOOK (16 lh EDITION) Gastronomy in the town of Szeged can be rightly proud of a number of writings on cookery, but by far the most outstanding of these is Auntie Rézi's 'Szeged Cookery Book'. Auntie Rézi (her full name: Teréz Doleskó (Zsalovits Józsefné) a cook by profession, was born in Szeged in 1821 and died here on 21 September 1883 at the age of 62. The career of her 'Szeged Cookery Book' took of 130 years ago in 1876 and has been popular ever since. We estimate that the 16 th edition closely examined by us was first published at the beginning of the 1930's. The book consist of 21 units of which the recipes are grouped into 20 chapters, while the last part provides instructions concerning the serving of food. At the end can be found the index and the contents page to make the user's task easy. The 16 Ul edition contains nearly 1300 descriptions. This is a considerable increase compared to the first edition's 811 or the fifth's 1050 recipes. Having studied the book's editing and contents we can state that Auntie Rézi's work is truly a cookery book for the middle classes! The author and also later editors were all trying to provide the reader with a cookery book that helps them prepare the simplest everyday dishes as well as the most complicated dinners for special occasions.
