SCHAFFER BUTOR Hungarian red pepper or paprika In preserve Industry Hungarian red pepper substitutes and even surpasses Oversea pepper. — Spanish red pepper is not Identical with Hungarian paprika. — Official testing stations and seals guarantee genuine qualities of Hungarian red pepper to foreign customers One of the special products of Hungarian agriculture, cultivated on a big scale chiefly at two regions of ihe Hungarian Lowland, around Szeged and Kalocsa, is red pepper („paprika"). The first plants have been introduced into Europe by the Turks from India and systematical cultivation In Hungary begins at the end of the 17-th and at the rise of ihe 18-th Centuries. Red pepper which became generally known outside Hungary at Ihe end of the last Century, constitutes, pulverised, a savoury condiment, a peptic spice. Recently conserve factories started to use it prominently instead of oversea pepper. Its prevalent feature as compared with ihe latter is that smaller quantities are needed for seasoning meats while it is more efficacious as a preserver. Waste parts are used wifh good sucees for destroying worms. Hungarian red pepper is competed on the world market by Spanish red pepper which is however only similar but not identical as a plant because of being in want of one essential chemical ingredient ofHungrian red pepper, viz. capsaicin. Its Irue name Is Spanish pepper or pimenfo. The difference In use Is that Spanish pepper dyes only and settles at the bottom during cooking while Hungarian red pepper, Resides colouring gives also a taste to meats in which it diffuses all through. The production of Hungarian red pepper practiced in the environs of Szeged and Kalocsa by several thousands of small landowners and farmers, amounts aktually to about 400 waggons per year, out of which about 200 waggons are exported. With regard to the important and ever increasing interests in exporting, the Hungarian Ministry of Agriculture has provided eight years ago for an Institutional protection of red pepper produced in the regions of Szeged and Kalocsa by placing its Introduction into commerce under the conrol of the Analytical Offices of the State at Szeged and at Kalocsa. These Offices control the preparation and the milling of red pepper, analyse, qualify and classify the milled product Alter classification the Analitical Offices of the State apply to the red pepper examined leaden seals showing the following types: sweet choice, medium sweet or goolash, I. or rose, II. or strong, III. or mercantile. The characteristical components of the different types are chemically established. Thus, for inst. the taste of swet choice is gently piquant, savoury, of a vivid red colour. Its ether extract cannot be more than 18%, the rests and ashes, when burned, do no exceed 6'5%, the ash dissolved in weak 10% hydrochloric acid, soluble parts or sand most not surpass 0.5%. This severe control and classification constitutes a full guarantee against the ever increasing falsification of victuals. It is therefore most important for buyers to accept only Hungarian red pepper bearing the official seal. As it occured in the last times that merchandise has been put into commerce abroad with falsified seals, the most practical way for buyers is to order direct at the production places where very important firms, existing since several decades are trading wiih this article.
